These black chickpeas are a variety originally from Cassano delle Murge, in Puglia. Compared to their rough-skinned brothers, these have a smooth skin and an even more intense taste.

A particular variety of chickpea, not only for its colour and size, but also for its taste. It has an intense, velvety, chestnut-like taste.

Highly protein and nutritious, these chickpeas have a black skin, while the inside is yellow. They are an excellent source of folic acid and potassium, rich in iron, magnesium and phosphorus.

Compared to yellow chickpeas, black chickpeas have a higher fiber and iron content.

They are the most versatile legumes; they are served as an appetizer, are used to prepare tasty soups and as an accompaniment to many dishes. Delicious cold salad or puree.

After more than 12 hours of soaking they are cooked in about 90 minutes or more depending on taste.
