These iridescent olives are harvested immediately after the beginning of ripening. At that moment not all the olives are black; some are red, some are partially black and some are still green.

This type of olive in brine replaces, in all uses, black olives, unlike which it has a fresher taste with a tasty, slightly bitter finish, especially for greener olives.

The debittering was obtained by a long natural fermentation process, without the use of chemicals (sodium hydroxide). This method allows to obtain the BIO certification, otherwise not obtainable.

Conservation takes place in brine without any pasteurization to maintain the organoleptic characteristics unchanged.

It can be enjoyed as an aperitif, as a side dish of fish and meat cooked on the grill or in the oven.
