The hot pepper Pasilla Bajio, also called Chile Negro and Chilaca, belongs to the genus Capsicum Annuum. The origin is Mexican and dates back to the early 1900s.
The name “Pasilla” means “raisins” and derives from the colour and taste of chilli pepper.
It is usually called Chilaca when it is fresh and Pasilla when it is dry. It is a very robust variety and is characterized by splendid moderately spicy fruits, which can reach 20/23 cm in length and when ripe take on an intense black colour with beautiful nuances.
Thin, not very watery flesh. Delicious both fresh and dried. The aroma is very particular and complex: it seems to recall dried fruit, liquorice, dark chocolate and for some even smoky aroma. Particularly interesting is the one that, thanks to its low level of hotness, can be used in large quantities giving the dishes all the specific aromas of this chili pepper.
The dried fruits are the basis for the preparation of many Mexican sauces called “mole” including “mole negro” and “mole poblano”.
The degree of hotness can vary between 200 and 1,500 Scoville degrees.
